Homemade Coconut Almond Butter


Aloha yall!
With swimsuit season already here I have been working out and weight training the past 2 weeks
Now don't get me wrong, with the exception of my brunch posts, I have actually always eaten pretty healthy. . . I know, shocker alert! Lol
So I thought I would post a DIY on one of my favorite healthy fats. that truly keeps my sweet tooth at bay. . .
ALMOND BUTTER
And add in my favorite thing
No, not pugs or pineapples
🌴COCONUT🌴
Now I know some people are iffy about the texture of raw coconut, but if you toast it is the oven . . . I swear it totally changes the whole experience and you will love it!


Shopping List:
2 cups of raw almonds
1cup of UNsweetened coconut
1/4 tblsp of salt
1-3 tblsp of melted coconut oil

1. Preheat oven to 350.
2. Pour almonds on a cookie sheet, no need to spray. Bake for 10 minutes.

3. Mix coconut in with almonds and bake for 5-7 more minutes. Make sure the coconut doesn't burn!

4. While they are still hot/warm, pour almonds, coconut, salt, and 1 tblsp of coconut oil in food processor. . . If you don't have one just use your blender.


5. Purée on high speed for 7 minutes; adding in coconut oil for consistency. The mixture will be coarse at first but then it will purée to almost a paste within minutes.




I personally like my almond butter thick rather than runny, so I only used 1 tblsp.
6. Store in air tight container or Mason Jar and you're good to go!

    1. It actually was! I already have coconut oil and salt on hand, and the shredded coconut is only $1.19 (enough for 3 batches) and the raw almonds were only $4.49 for 2 cups in the produce section at Food Lion. . . If you're buying from Harris Teeter it is a lot more expensive tho.
